Description

A delightful combination of tender chicken, vibrant asparagus, and the warm spice of ginger, perfect for a quick and wholesome dinner.


Ingredients

  • 1 lb chicken breast, sliced
  • 1 bunch asparagus, cut into 2-inch pieces
  • 2 tablespoons fresh ginger, grated
  • 2 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon corn starch (optional for thickening)
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. Heat sesame oil in a large skillet over medium-high heat.
  2. Add the sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.
  3. Add the ginger and garlic, sautéing for another 1-2 minutes until fragrant.
  4. Add the asparagus and stir-fry for about 3-4 minutes until tender but still crisp.
  5. Mix the soy sauce and corn starch (if using) in a small bowl, then pour over the stir fry.
  6. Stir well to coat everything and cook for another 2-3 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot over cooked rice.

Notes

For a gluten-free version, substitute soy sauce with tamari.
