Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.
- Stir in the minced garlic and grated ginger, and cook for an additional minute.
- Pour in the chicken broth and bring to a simmer.
- Add the cooked shredded chicken and vegetables to the pot.
- Once the soup is simmering again, add the noodles and cook according to package instructions until tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with chopped green onions.
