Ingredients

  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1/4 cup molasses
  • 1/4 cup granulated sugar (for rolling)
  • 1 cup eggnog
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, ginger, cinnamon, baking soda, cloves, and salt.
  3. Cream together softened butter and brown sugar until light and fluffy. Add egg and molasses; mix well.
  4. Gradually add dry mixture to wet ingredients until just combined.
  5. Roll dough into balls and coat in granulated sugar. Place on lined baking sheet.
  6. Bake for 8-10 minutes until edges are set. Let cool on baking sheet.
  7. For the frosting, beat softened butter until creamy. Gradually add powdered sugar and vanilla, then mix in eggnog until smooth.
  8. Spread frosting on one cookie and sandwich it with another. Allow to set before serving.

Notes

Make sure to let cookies cool completely before frosting to prevent melting.
