- 2 cups all-purpose flour
- 1 tablespoon ground ginger
- 1 tablespoon ground cinnamon
- 1 teaspoon baking soda
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1 large egg
- 1/4 cup molasses
- 1/4 cup granulated sugar (for rolling)
- 1 cup eggnog
- 1/2 cup unsalted butter, softened (for frosting)
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, ginger, cinnamon, baking soda, cloves, and salt.
- Cream together softened butter and brown sugar until light and fluffy. Add egg and molasses; mix well.
- Gradually add dry mixture to wet ingredients until just combined.
- Roll dough into balls and coat in granulated sugar. Place on lined baking sheet.
- Bake for 8-10 minutes until edges are set. Let cool on baking sheet.
- For the frosting, beat softened butter until creamy. Gradually add powdered sugar and vanilla, then mix in eggnog until smooth.
- Spread frosting on one cookie and sandwich it with another. Allow to set before serving.
Notes
Make sure to let cookies cool completely before frosting to prevent melting.
