- 2 lbs fresh carrots, peeled and cut into 2-inch diagonal pieces
- 2 tablespoons fresh ginger, finely grated (or 1 tsp ground ginger)
- 3 tablespoons pure maple syrup
- 3 tablespoons extra virgin olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh thyme leaves (or 1 tsp dried thyme)
- Optional: pinch of red pepper flakes for heat
- Fresh lemon juice for finishing
Instructions
- Preheat your oven to 425°F.
- Prepare the carrots by peeling and cutting them into 2-inch diagonal pieces.
- In a large bowl, combine maple syrup, grated ginger, olive oil, salt, and pepper. Whisk until well blended.
- Toss the carrot pieces in the dressing until fully coated.
- Lay the coated carrots on a large baking sheet in a single layer.
- Roast the carrots for 25-30 minutes, flipping halfway through until golden and tender.
- During the last 5 minutes of cooking, sprinkle with fresh thyme.
- Drizzle with fresh lemon juice before serving.
Notes
For added visual flair, try using rainbow carrots. These roasted carrots taste even better the next day. Store leftovers in the fridge for up to four days.
