Description

Ginger Roasted Carrots are a delightful side dish that combines sweet and zesty flavors with a perfect caramelized finish.


Ingredients

  • 2 lbs fresh carrots, peeled and cut into 2-inch diagonal pieces
  • 2 tablespoons fresh ginger, finely grated (or 1 tsp ground ginger)
  • 3 tablespoons pure maple syrup
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh thyme leaves (or 1 tsp dried thyme)
  • Optional: pinch of red pepper flakes for heat
  • Fresh lemon juice for finishing

Instructions

  1. Preheat your oven to 425°F.
  2. Peel the carrots and slice them into diagonal pieces about 2 inches long.
  3. In a larger mixing bowl, whisk together the maple syrup, grated ginger, olive oil, sea salt, and black pepper until smooth.
  4. Add the carrot pieces to the bowl and toss well until every piece is coated.
  5. Spread the coated carrots on a large baking sheet in a single layer.
  6. Roast the carrots for about 25-30 minutes, flipping them once halfway through, until they are golden brown and tender.
  7. In the last 5 minutes of cooking, sprinkle fresh thyme on top.
  8. Finish with a squeeze of fresh lemon juice and serve immediately.

Notes

These roasted carrots taste even better the next day and keep well in the fridge.
