Ginger Roasted Carrots are a delightful side dish that combines sweet and zesty flavors with a perfect caramelized finish.

- 2 lbs fresh carrots, peeled and cut into 2-inch diagonal pieces
- 2 tablespoons fresh ginger, finely grated (or 1 tsp ground ginger)
- 3 tablespoons pure maple syrup
- 3 tablespoons extra virgin olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh thyme leaves (or 1 tsp dried thyme)
- Optional: pinch of red pepper flakes for heat
- Fresh lemon juice for finishing
Instructions
- Preheat your oven to 425°F.
- Peel the carrots and slice them into diagonal pieces about 2 inches long.
- In a larger mixing bowl, whisk together the maple syrup, grated ginger, olive oil, sea salt, and black pepper until smooth.
- Add the carrot pieces to the bowl and toss well until every piece is coated.
- Spread the coated carrots on a large baking sheet in a single layer.
- Roast the carrots for about 25-30 minutes, flipping them once halfway through, until they are golden brown and tender.
- In the last 5 minutes of cooking, sprinkle fresh thyme on top.
- Finish with a squeeze of fresh lemon juice and serve immediately.
