Description

Delicious cookies combining the spiced goodness of gingerbread with a creamy cheesecake filling, perfect for holiday gatherings.


Ingredients

  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves

  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar mixed with 1 teaspoon cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt until evenly combined.
  3. In another bowl, beat the softened butter and brown sugar together until light and fluffy. Add the molasses and egg, mix well.
  4. Gradually add the dry ingredients to the wet ingredients. Stir until just combined.
  5. In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla until smooth.
  6. Scoop a tablespoon of cookie dough, flatten it, place a teaspoon of cheesecake filling in the center, fold the dough over, and roll into a ball.
  7. Roll each ball in the spiced sugar mixture.
  8. Place on a baking sheet and bake for 10-12 minutes, until set but still soft in the center.
  9. Allow to cool before serving.
