These gingerbread cookies are soft, chewy, and full of warm spices. They’re perfect for sharing during the holidays or enjoying any time of the year!
Ingredients

- 3 cups all-purpose flour
- 1 tsp baking soda
- 1 tbsp ground ginger
- 1 tbsp ground cinnamon
- 1 cup brown sugar
- 3/4 cup unsalted butter, softened
- 1/2 cup molasses (unsulfured)
- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, ginger, and cinnamon.
- In another bowl, cream the softened butter and brown sugar until fluffy.
- Add molasses and eggs to the butter mixture; mix until smooth.
- Gradually stir in the dry ingredients until just combined.
- Wrap the dough in plastic wrap; refrigerate for at least one hour.
- Roll out dough on a floured surface to about 1/4 inch thick; cut into shapes.
- Place cookies on a parchment-lined sheet; bake for 8-10 minutes.
- Cool on a wire rack, then decorate as desired.
Notes
Use different cookie cutters to create fun shapes. For added flavor, mix in some finely chopped nuts or chocolate chips.
