Description

These gingerbread cookies are soft, chewy, and full of warm spices. They’re perfect for sharing during the holidays or enjoying any time of the year!


Ingredients

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • 1 cup brown sugar
  • 3/4 cup unsalted butter, softened
  • 1/2 cup molasses (unsulfured)
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, ginger, and cinnamon.
  3. In another bowl, cream the softened butter and brown sugar until fluffy.
  4. Add molasses and eggs to the butter mixture; mix until smooth.
  5. Gradually stir in the dry ingredients until just combined.
  6. Wrap the dough in plastic wrap; refrigerate for at least one hour.
  7. Roll out dough on a floured surface to about 1/4 inch thick; cut into shapes.
  8. Place cookies on a parchment-lined sheet; bake for 8-10 minutes.
  9. Cool on a wire rack, then decorate as desired.

Notes

Use different cookie cutters to create fun shapes. For added flavor, mix in some finely chopped nuts or chocolate chips.
