Description

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup molasses
  • 1 egg
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1 cup white chocolate chips
  • 1/2 cup brewed espresso, cooled
  • Sprinkle of spice (cinnamon or nutmeg) for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the brown sugar and butter until smooth.
  3. Beat in the molasses and egg until well combined.
  4. In another bowl, whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Stir in the white chocolate chips and cooled espresso.
  7. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
  10. Before serving, dip the tops in melted white chocolate and sprinkle with a little cinnamon or nutmeg for a festive touch.
