Instructions
- In a large mixing bowl, whisk together all the dry ingredients: flour, both sugars, baking soda, baking powder, salt, ground ginger, cinnamon, and cloves.
- In another bowl, whisk together the wet ingredients: melted butter, milk, eggs, molasses, fresh ginger, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just blended. Let the batter rest for about 10 minutes.
- Preheat the waffle iron and lightly spray it with cooking spray. Cook the batter according to the waffle iron’s instructions until golden brown and crispy.
- To keep cooked waffles warm, place them in a preheated oven. Serve with toppings like maple syrup or whipped cream.
Notes
Use room temperature ingredients for better mixing. Don’t overmix the batter to avoid tough waffles.
