- 500g beef (cut into chunks)
- 300g orzo pasta
- 400g canned tomatoes (crushed or diced)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 2 cups beef broth
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Parmesan cheese (for serving, optional)
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, stirring until they soften and become fragrant.
- Add the beef chunks to the pot and brown them on all sides.
- Stir in the canned tomatoes, beef broth, dried oregano, thyme, salt, and pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat, cover, and let it simmer for about 90 minutes until the beef is tender.
- Stir in the orzo pasta and cook for an additional 10-12 minutes or until the pasta reaches the al dente stage.
- Serve hot, optionally topped with freshly grated Parmesan cheese.
