Description

  • 300g orzo pasta
  • 400g canned tomatoes (crushed or diced)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 2 cups beef broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Parmesan cheese (for serving, optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, stirring until they soften and become fragrant.
  2. Add the beef chunks to the pot and brown them on all sides.
  3. Stir in the canned tomatoes, beef broth, dried oregano, thyme, salt, and pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat, cover, and let it simmer for about 90 minutes until the beef is tender.
  5. Stir in the orzo pasta and cook for an additional 10-12 minutes or until the pasta reaches the al dente stage.
  6. Serve hot, optionally topped with freshly grated Parmesan cheese.
