Ingredients

  • 2 cups chicken broth
  • 1 lb chicken breast, diced
  • 1 cup chopped vegetables (peppers, zucchini, broccoli)
  • 1 cup dairy-free cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat until it shimmers.
  2. Add the diced chicken and cook until browned.
  3. Stir in the chopped vegetables and cook for another 5 minutes.
  4. Add the gluten-free pasta and chicken broth to the pot. Bring everything to a boil.
  5. Once boiling, reduce the heat and simmer until the pasta is cooked through, about 10-12 minutes.
  6. Stir in garlic powder, onion powder, salt, pepper, and dairy-free cheese until it melts.
  7. Serve warm, garnished with fresh herbs if desired.
