- 2 lbs gluten-free pasta
- 2 cups chicken broth
- 1 lb chicken breast, diced
- 1 cup chopped vegetables (peppers, zucchini, broccoli)
- 1 cup dairy-free cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat the olive oil over medium heat until it shimmers.
- Add the diced chicken and cook until browned.
- Stir in the chopped vegetables and cook for another 5 minutes.
- Add the gluten-free pasta and chicken broth to the pot. Bring everything to a boil.
- Once boiling, reduce the heat and simmer until the pasta is cooked through, about 10-12 minutes.
- Stir in garlic powder, onion powder, salt, pepper, and dairy-free cheese until it melts.
- Serve warm, garnished with fresh herbs if desired.
