A delightful gluten-free version of orange chicken that combines crispy chicken with a zesty orange sauce.

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 3/4 cup gluten-free flour blend
- 2 large eggs, beaten
- Vegetable oil for frying (about 2 cups)
- 3/4 cup freshly squeezed orange juice
- 1 tablespoon orange zest
- 3 tablespoons gluten-free soy sauce
- 2 tablespoons honey or maple syrup
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 tablespoon cornstarch or tapioca starch
- 2 tablespoons water
Instructions
- Prepare the Chicken: Cut the chicken breasts into bite-sized pieces and pat them dry.
- Coating the Chicken: Dip each piece into the beaten eggs, then coat with gluten-free flour.
- Frying the Chicken: Heat oil to 350-375°F and fry the chicken for 4-5 minutes until golden brown.
- Making the Sauce: In a saucepan, combine orange juice, zest, soy sauce, honey, garlic, and ginger; heat and mix in cornstarch slurry to thicken.
- Combining Chicken and Sauce: Pour the sauce over the fried chicken and toss to coat. Serve immediately.

Serve the chicken on rice or quinoa and garnish with green onions or sesame seeds.
