Description

Ingredients

  • 1 package gnocchi
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 cup diced cooked chicken (optional)
  • 2 cups creamy chicken soup or a homemade cream sauce
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 teaspoon thyme
  • 1/2 teaspoon rosemary

Instructions

  1. Cook the gnocchi according to package instructions until they float, about 2-3 minutes. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add mixed vegetables and sauté for about 5 minutes until tender.
  4. If using chicken, add diced cooked chicken to the skillet.
  5. Pour in the creamy soup and milk, and season with garlic powder, onion powder, thyme, rosemary, salt, and pepper.
  6. Mix thoroughly and bring to a simmer to meld the flavors.
  7. Add the drained gnocchi and stir until well coated with the filling.
  8. Cook for an additional 5 minutes, stirring occasionally.
  9. Serve warm and enjoy the delightful aroma and colors.
