- 1 package gnocchi
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 cup diced cooked chicken (optional)
- 2 cups creamy chicken soup or a homemade cream sauce
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 teaspoon thyme
- 1/2 teaspoon rosemary
Instructions
- Cook the gnocchi according to package instructions until they float, about 2-3 minutes. Drain and set aside.
- Heat olive oil in a large skillet over medium heat.
- Add mixed vegetables and sauté for about 5 minutes until tender.
- If using chicken, add diced cooked chicken to the skillet.
- Pour in the creamy soup and milk, and season with garlic powder, onion powder, thyme, rosemary, salt, and pepper.
- Mix thoroughly and bring to a simmer to meld the flavors.
- Add the drained gnocchi and stir until well coated with the filling.
- Cook for an additional 5 minutes, stirring occasionally.
- Serve warm and enjoy the delightful aroma and colors.
