Ingredients

  • 1/4 cup Water (lukewarm)
  • 2 1/4 tsp Instant Yeast (1 packet)
  • 1/4 cup Granulated Sugar
  • 3 3/4 cup All-Purpose Flour
  • 4 tbsp Unsalted Butter (divided)
  • 1 tsp Salt
  • 1/8 cup Unsweetened Cocoa Powder
  • 1/8 cup Heavy Whipping Cream
  • 1/3 cup Semi-Sweet Chocolate Chips
  • 1/4 cup Graham Cracker Crumbs
  • 2 large Egg Whites (room temperature)
  • 1/2 cup Granulated Sugar
  • 1/8 tsp Cream of Tartar
  • 1/8 tsp Salt
  • 1/2 tsp Vanilla Extract (divided)

Instructions

  1. Dough Preparation: In a bowl, combine lukewarm milk, water, and instant yeast. Sprinkle in granulated sugar and let it sit until foamy, about 5-10 minutes. In a large mixing bowl, combine flour, salt, and cocoa powder. Pour in the yeast mixture and melted butter (save some butter for later). Mix until a dough forms.
  2. Filling Preparation: In a separate bowl, whisk together the heavy whipping cream, chocolate chips, graham cracker crumbs, egg whites, sugar, cream of tartar, salt, and vanilla extract until well combined.
  3. Assembly: Roll out the dough on a floured surface to a rectangle. Spread the filling evenly over the dough, leaving an inch around the edges. Roll it up tightly from the long side and pinch to seal the seams. Slice into rolls and place them in a greased baking dish.
  4. Baking: Preheat your oven to 350°F (175°C) and let the rolls rise for about 20-30 minutes while the oven heats. Bake in the preheated oven for 25-30 minutes until golden brown.
  5. Meringue Topping: While the rolls bake, whip the remaining egg whites with sugar, cream of tartar, and vanilla extract until stiff peaks form. Spread this meringue over the baked rolls in the last few minutes of baking.
  6. Finalizing Rolls: Allow the rolls to cool slightly before drizzling with extra melted chocolate or a sprinkle of graham cracker crumbs for presentation.

Notes

For extra gooeyness, add a bit more chocolate to the filling; be cautious not to overflow during baking.
