Description

A delightful dish combining grilled chicken, fresh vegetables, and fluffy grains, featuring a creamy tzatziki sauce.

Ingredients

Scale
  • 2 chicken breasts
  • 1 cup rice or quinoa
  • 1 cucumber, diced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • For tzatziki sauce:
  • 1 cup Greek yogurt
  • 1/2 cucumber (grated and drained)
  • 1 garlic clove (minced)
  • Fresh dill

Instructions

  1. Marinate the chicken by combining olive oil, lemon juice, salt, and pepper. Let sit for at least 30 minutes.
  2. Grill the marinated chicken on a preheated grill for about 6-7 minutes on each side until cooked through. Let rest before slicing.
  3. Cook your rice or quinoa according to package instructions.
  4. Make tzatziki by combining Greek yogurt, grated cucumber, minced garlic, and fresh dill in a bowl.
  5. Assemble the bowls with a layer of rice or quinoa, sliced grilled chicken, diced veggies, and a drizzle of tzatziki sauce.

Notes

For maximum flavor, marinate the chicken overnight. Store leftovers separately to maintain freshness.
