- 4 boneless, skinless chicken breasts
- 2 cups cooked quinoa or rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 red onion, thinly sliced
- 1 cup feta cheese, crumbled
- 1/2 cup Kalamata olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- Olive oil for drizzling
- 1 cup Greek yogurt (for tzatziki sauce)
- 1 cucumber, grated and drained (for tzatziki sauce)
- 2 cloves garlic, minced (for tzatziki sauce)
- 1 tablespoon fresh dill, chopped (for tzatziki sauce)
- 1 tablespoon lemon juice (for tzatziki sauce)
- Salt to taste (for tzatziki sauce)
Instructions
- Marinate the chicken breasts in olive oil, garlic, salt, and pepper for at least 30 minutes.
- Grill or bake the chicken until fully cooked, approximately 6-7 minutes per side. Let it rest before slicing.
- In a bowl, mix Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt for the tzatziki sauce.
- In a bowl, layer quinoa or rice at the base and add cherry tomatoes, cucumber, bell pepper, red onion, sliced chicken, feta cheese, Kalamata olives, and finish with parsley.
- Serve with tzatziki sauce on the side.
