  • For tzatziki: 1 cup Greek yogurt, 1/2 cucumber, grated, 1 clove garlic, minced, 1 tablespoon dill, 1 tablespoon lemon juice, 1/2 teaspoon salt

Instructions

  1. Marinate the chicken breasts in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
  2. Grill the marinated chicken until fully cooked and juicy; slice thinly.
  3. Cook the brown rice or quinoa according to package directions.
  4. Prepare tzatziki by mixing Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt until smooth.
