Description

A delightful dish featuring marinated chicken, creamy tzatziki sauce, and fluffy couscous, bringing Mediterranean flavors to your table.

Ingredients

Scale
  • 4 chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup couscous
  • 1 cup chicken broth or water
  • 1 cucumber, grated
  • 1 cup Greek yogurt
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice (for tzatziki)
  • Salt to taste

Instructions

  1. Marinate the Chicken: Combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl. Add chicken breasts, ensuring they are well coated. Let marinate for at least 30 minutes.
  2. Prepare Tzatziki Sauce: Mix grated cucumber with Greek yogurt, dill, lemon juice, and a pinch of salt in a bowl. Cover and refrigerate.
  3. Cook the Couscous: Bring chicken broth (or water) to a boil in a saucepan. Stir in couscous, cover, and remove from heat. Let sit for about 5 minutes, then fluff with a fork.
  4. Grill or Pan-Sear the Chicken: Heat a grill or pan over medium heat. Cook chicken breasts for about 6-7 minutes on each side until fully cooked through, reaching an internal temperature of 165°F.
  5. Assemble and Serve: Plate with couscous at the bottom, grilled chicken on top, and drizzle tzatziki over everything.

Notes

For enhanced flavor, allow marination longer than 30 minutes, and consider adding fresh herbs for garnish.
