Description

Ingredients

  • 4 large Potatoes
  • 3 tablespoons Olive oil
  • 1 tablespoon Oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 cup Feta cheese, crumbled
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the potatoes into uniform chunks, about 1 to 2 inches.
  3. Drizzle the potatoes with olive oil and sprinkle with oregano, salt, and pepper; toss to coat.
  4. Spread the potatoes on a baking sheet in a single layer.
  5. Roast for 30-35 minutes, stirring halfway through, until golden and crispy.
  6. In the last 5 minutes of roasting, crumble feta cheese on top of the potatoes.
  7. Remove from the oven and garnish with fresh parsley before serving.
