- 4 large Potatoes
- 3 tablespoons Olive oil
- 1 tablespoon Oregano
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 cup Feta cheese, crumbled
- Fresh parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the potatoes into uniform chunks, about 1 to 2 inches.
- Drizzle the potatoes with olive oil and sprinkle with oregano, salt, and pepper; toss to coat.
- Spread the potatoes on a baking sheet in a single layer.
- Roast for 30-35 minutes, stirring halfway through, until golden and crispy.
- In the last 5 minutes of roasting, crumble feta cheese on top of the potatoes.
- Remove from the oven and garnish with fresh parsley before serving.
