- 2 tablespoons Olive oil
- 1 medium Onion, finely diced
- 1 pound Green beans, trimmed
- 1 medium Tomato, diced
- 1 pound Baby potatoes, halved
- Salt & pepper, to taste
- 3 tablespoons Water
- Lemon juice for serving (optional)
- Parsley for garnish (optional)
Instructions
- Gather all ingredients. Wash and trim the green beans, wash and halve the baby potatoes, and dice the onion and tomato.
- In a large pan, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Add halved baby potatoes to the pan and stir to coat. Cook for an additional 5 minutes.
- Incorporate the trimmed green beans and stir. Cook for about 5 minutes until they begin to soften.
- Add diced tomato, salt, and pepper. Stir to combine; the tomatoes will release their juices.
- Pour in water, cover the pan, and steam for 15-20 minutes, stirring occasionally.
- Once vegetables are tender, stir and adjust seasoning to taste. Drizzle lemon juice if desired.
- Transfer to a serving dish and garnish with parsley. Serve warm or at room temperature.
