Ingredients

Scale
  • 1 lb ground beef or lamb
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 clove garlic, minced
  • 1 egg
  • Salt and pepper to taste
  • 1 cup cooked rice
  • 1 cup diced cucumbers
  • 1 cup diced tomatoes

  • Tzatziki sauce

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the ground meat, breadcrumbs, Parmesan cheese, parsley, garlic, egg, salt, and pepper in a mixing bowl. Mix well and form into meatballs, about 1-2 inches in diameter.
  3. Place the meatballs on a baking sheet and bake for 20-25 minutes or until cooked through.
  4. Serve the meatballs on a bed of cooked rice, topped with diced cucumbers, tomatoes, and shredded lettuce.
  5. Drizzle generously with tzatziki sauce before serving.

Notes

For a leaner option, consider using ground turkey. Feel free to spice it up or add more fresh herbs to the meatball mixture for extra flavor.
