Description

Ingredients

  • 8 oz Pasta (fusilli or macaroni)
  • 1 cup Cherry tomatoes, halved
  • 1 Cucumber, diced
  • 1 Bell pepper, diced
  • 1/2 Red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup Feta cheese, crumbled
  • 1/4 cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse with cold water to cool down.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, olives, and feta cheese. Toss to mix evenly.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper. This will be your zesty dressing.
  4. Pour the dressing over the pasta salad and toss well to combine, ensuring everything is coated.
  5. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld together.
