Description

A delicious and vibrant pasta dish featuring salty feta, briny olives, and fresh vegetables, embodying Mediterranean cooking.


Ingredients

  • 12 oz (340g) spaghetti or your choice of pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 medium red onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and sliced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 8 oz (225g) feta cheese, crumbled
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1 lemon

Instructions

  1. Bring a pot of salted water to a boil and cook spaghetti until al dente. Reserve 1/2 cup pasta water, drain, and set aside.
  2. In a large skillet, heat olive oil over medium heat and sauté minced garlic for 1 minute.
  3. Add red onion and red bell pepper; cook until softened, about 5 minutes.
  4. Stir in cherry tomatoes, Kalamata olives, dried oregano, and red pepper flakes, cooking until tomatoes begin to soften (3-4 minutes).
  5. Season with salt and pepper to taste.
  6. Add cooked spaghetti to the skillet, tossing to combine. Add reserved pasta water as needed for consistency.
  7. Remove from heat and gently fold in feta cheese, basil, and parsley.
  8. Finally, add lemon juice and toss to incorporate.
  9. Serve warm, garnished with extra herbs if desired.

Notes

For best flavor, serve fresh with additional herbs and consider pairing with a side salad.
