Description

Juicy turkey meatballs infused with garlic and oregano, served alongside refreshing lemon herb rice, perfect for weeknight dinners or gatherings.


Ingredients

  • 1 lb ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups cooked rice
  • 1 lemon (zested and juiced)
  • 2 tbsp olive oil
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, garlic, oregano, salt, and pepper. Form into meatballs.
  3. Place the meatballs on a baking sheet lined with parchment paper and bake for 20-25 minutes or until cooked through.
  4. While meatballs are baking, in a saucepan, heat olive oil over medium heat, add cooked rice, lemon zest, lemon juice, and parsley. Stir until heated through.
  5. Serve the turkey meatballs over the lemon herb rice.

Notes

Don’t overmix the meatball mixture. Using fresh herbs enhances the flavor. Feel free to substitute ingredients to accommodate dietary preferences.
