Ingredients

  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup rice
  • 2 cups chicken broth
  • 1 lemon (zested and juiced)
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground turkey, breadcrumbs, Parmesan, egg, minced garlic, oregano, salt, and black pepper. Mix until well combined, but don’t overmix.
  3. Form the mixture into golf ball-sized meatballs and place them on a baking sheet lined with parchment paper.
  4. Drizzle meatballs with olive oil and bake for 20-25 minutes until cooked through and golden brown.
  5. While the meatballs bake, bring chicken broth to a boil in a saucepan. Stir in rice, lemon zest, and juice. Cook according to package instructions.
  6. Once rice is done, fluff with a fork and stir in chopped parsley.
  7. Serve turkey meatballs over the lemon herb rice and enjoy!

Notes

Don’t overmix the meat for tender meatballs. Substitute with plant-based meat for a vegan version.
