- 1 pound ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup rice
- 2 cups chicken broth
- 1 lemon (zested and juiced)
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- In a large mixing bowl, combine ground turkey, breadcrumbs, Parmesan, egg, minced garlic, oregano, salt, and black pepper. Mix until well combined, but don’t overmix.
- Form the mixture into golf ball-sized meatballs and place them on a baking sheet lined with parchment paper.
- Drizzle meatballs with olive oil and bake for 20-25 minutes until cooked through and golden brown.
- While the meatballs bake, bring chicken broth to a boil in a saucepan. Stir in rice, lemon zest, and juice. Cook according to package instructions.
- Once rice is done, fluff with a fork and stir in chopped parsley.
- Serve turkey meatballs over the lemon herb rice and enjoy!
Notes
Don’t overmix the meat for tender meatballs. Substitute with plant-based meat for a vegan version.
