Ingredients

  • 1 lb ground turkey
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cup rice
  • 2 cups chicken broth
  • 1 lemon (zested and juiced)
  • 2 tbsp fresh herbs (parsley, dill, or basil)
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan, egg, garlic, oregano, salt, and pepper. Mix until just combined.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake for 20-25 minutes or until cooked through.
  5. Meanwhile, cook the rice according to package instructions, using chicken broth instead of water for extra flavor.
  6. Once the rice is cooked, stir in lemon zest, lemon juice, and fresh herbs.
  7. Serve the turkey meatballs over the lemon herb rice.

Notes

Use fresh herbs for better flavor and do not overmix the meatball mixture to keep them tender.
