- 3 ripe medium bananas
- ½ cup (113g) unsalted butter, melted
- ½ cup (120g) plain Greek yogurt
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 ¾ cups (210g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¾ cup (150g) granulated sugar
- ½ cup (100g) packed light brown sugar
- 1 cup chocolate chips (optional)
- 1/3 cup chopped walnuts or pecans (optional)
- 1/2 cup fresh or frozen blueberries or raspberries (optional)
- 1 teaspoon ground cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease and line a 9×5 inch loaf pan with parchment paper.
- Mash the ripe bananas until smooth in a large mixing bowl. Add the melted butter, Greek yogurt, eggs, and vanilla extract, mixing until combined.
- In another bowl, whisk together flour, baking soda, salt, granulated sugar, brown sugar, and optional cinnamon.
- Pour the wet ingredients into the dry ingredients and gently fold until just combined. If desired, fold in chocolate chips, nuts, or berries.
- Transfer the batter to the loaf pan and bake for 55 to 65 minutes, or until a skewer comes out clean.
- Let the bread cool in the pan for 10-15 minutes, then lift it out and cool completely before slicing.
Notes
Use overripe bananas for better sweetness and flavor. Customize with your favorite mix-ins like nuts or dried fruit.
