- 1 cup Rice (cooked according to package instructions)
- 2 tbsp Lime juice (for mixing into rice)
- 1/4 cup Cilantro (chopped for mixing into rice)
- 1 lb Chicken strips (marinated with spices before grilling)
- 2 tbsp Olive oil (for marinating chicken)
- 1 tbsp Spices (like cumin and chili powder, for seasoning chicken)
- 1–2 cups Vegetables (like bell peppers and tomatoes, for toppings)
- 1 cup Corn (grilled until slightly charred)
Instructions
- Prepare 1 cup of rice according to package instructions. Once cooked, stir in 2 tablespoons of lime juice and 1/4 cup of chopped cilantro to infuse flavor.
- In a mixing bowl, toss 1 pound of chicken strips with 2 tablespoons of olive oil and 1 tablespoon of spices. Make sure to marinate for at least 15 minutes to enhance the chicken’s flavor.
- Preheat the grill and cook the marinated chicken for about 6-7 minutes on each side until it’s fully cooked through.
- While the chicken cooks, slice your choice of vegetables and grill 1 cup of corn until it’s slightly charred for added flavor.
- In bowls, layer the lime-cilantro rice, top with grilled chicken, and add your choice of veggies and corn. Serve immediately and enjoy your meal!
Notes
Marinate the chicken longer for more flavor and consider adding lime zest to the rice.
