Description

Vibrant and flavorful grilled chicken thighs marinated in zesty chimichurri sauce, perfect for summer barbecues and family dinners.


Ingredients

  • 4 chicken thighs
  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh oregano, chopped
  • 3 cloves garlic, minced
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a mixing bowl, combine the parsley, oregano, garlic, olive oil, red wine vinegar, salt, black pepper, and red pepper flakes. Stir well until everything is mixed and fragrant.
  2. Reserve half of the chimichurri sauce for later use when serving.
  3. In a dish, place the chicken thighs and pour the remaining chimichurri over the top. Coat well and let marinate for at least 30 minutes.
  4. Preheat your grill to medium-high heat.
  5. Grill the marinated chicken thighs for 6-7 minutes on each side until they reach an internal temperature of 165°F (75°C).
  6. Once cooked, remove from grill and let rest for a few minutes.
  7. Serve the grilled chicken thighs topped with the reserved chimichurri sauce.

Notes

Marination for longer enhances flavor; make extra chimichurri for salads or dipping.
