Ingredients

- 4 chicken thighs
- 1/2 cup fresh parsley, chopped
- 1/4 cup fresh oregano, chopped
- 3 cloves garlic, minced
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- In a mixing bowl, combine the parsley, oregano, garlic, olive oil, red wine vinegar, salt, black pepper, and red pepper flakes. Stir well until everything is mixed and fragrant.
- Reserve half of the chimichurri sauce for later use when serving.
- In a dish, place the chicken thighs and pour the remaining chimichurri over the top. Coat well and let marinate for at least 30 minutes.
- Preheat your grill to medium-high heat.
- Grill the marinated chicken thighs for 6-7 minutes on each side until they reach an internal temperature of 165°F (75°C).
- Once cooked, remove from grill and let rest for a few minutes.
- Serve the grilled chicken thighs topped with the reserved chimichurri sauce.
Notes
Marination for longer enhances flavor; make extra chimichurri for salads or dipping.
