- 8 oz halloumi cheese, sliced into ½-inch thick pieces
- 2 ripe tomatoes, sliced
- 4 fresh basil leaves
- 4 slices crusty ciabatta or sourdough bread
- 2 tbsp olive oil
Instructions
- Preheat your grill to medium heat (about 400°F/200°C).
- Brush both sides of the ciabatta or sourdough slices lightly with olive oil.
- Place the halloumi slices on the grill and cook for 2-3 minutes on each side until golden brown.
- Layer the grilled halloumi, tomato slices, and basil leaves between two pieces of the prepared bread.
- Grill the assembled sandwich for about a minute on each side until heated through and crispy.
Notes
For a vegan option, consider using grilled eggplant or zucchini instead of halloumi. Customize your bread choice to suit your taste.
