Description

Savory ground beef enchiladas wrapped in soft corn tortillas, topped with melted cheese and zesty sauce, perfect for family dinners and gatherings.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) red enchilada sauce
  • 1 can (4 oz) chopped green chilies
  • 8 – 10 corn tortillas
  • 1 1/2 cups shredded cheddar cheese or Mexican blend cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Olive oil or vegetable oil for frying
  • Optional toppings: sour cream, sliced olives, diced tomatoes, avocado, sliced jalapeños

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat a little oil over medium heat, add chopped onion, and cook until translucent.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Add ground beef to the skillet and cook until browned, ensuring it’s cooked through.
  5. Season with salt and pepper, then stir in chopped green chilies and cook for an additional 2 minutes.
  6. In a separate skillet, quickly fry each corn tortilla for a few seconds on each side.
  7. Pour a small amount of enchilada sauce into a baking dish.
  8. Fill each tortilla with the beef mixture and a bit of cheese, then roll and place seam-side down in the dish.
  9. Pour remaining enchilada sauce over the top and sprinkle remaining cheese.
  10. Bake for about 20 minutes or until cheese is melted and bubbly.
  11. Let rest for a few minutes before serving; garnish with cilantro.

For best results, fry the tortillas and ensure they are heated before rolling to prevent cracking.
