Description

A comforting bowl combining lean ground beef, creamy cottage cheese, and sweet potatoes, drizzled with hot honey for a perfect balance of sweet and spicy flavors.

Ingredients

Scale
  • 1 pound Ground Beef (93% lean)
  • 1 packet Taco Seasoning
  • 2 medium Sweet Potatoes
  • 1 cup Cottage Cheese
  • 1 medium Avocado (sliced)
  • 1/4 cup Hot Honey

Instructions

  1. Prepare the Sweet Potatoes: Peel and chop the sweet potatoes into bite-sized cubes. Boil or steam them until tender, about 15-20 minutes.
  2. Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, and mix in the taco seasoning.
  3. Combine Ingredients: Once the sweet potatoes are tender, drain them and mix with the cooked beef. Gently fold in cottage cheese for creaminess.
  4. Add Hot Honey: Drizzle the hot honey over the mixture and mix well. Adjust the amount based on your spice tolerance.
  5. Serve with Avocado: Scoop onto plates and top with fresh avocado slices.

Notes

For a vegan version, replace ground beef with lentils or chickpeas and use plant-based yogurt instead of cottage cheese.
