Description
A hearty and flavorful dish that combines ground beef, caramelized bell peppers, onions, and mushrooms, all topped with cheese, served over basmati rice.

- 3 lbs lean ground beef
- 2 medium green bell peppers, diced
- 2 small onions, sliced
- 4 cups sliced mushrooms
- 4 tsp seasoned soy sauce
- ½ cup beef broth
- 2 cups shredded Colby Jack or provolone cheese
- 4 cups cooked basmati rice
Instructions
- Cook the rice: If your rice isn’t pre-cooked, prepare it according to package directions. Once done, set it aside to cool.
- Sauté veggies: In a large skillet over medium heat, sauté the onions, peppers, and mushrooms for about 5-7 minutes until soft and slightly caramelized. Once ready, remove them from the skillet and set aside.
- Brown the beef: In the same skillet, add the ground beef. Cook until browned, breaking it apart as it cooks. Remember to drain any excess fat.
- Add flavor: Stir in the seasoned soy sauce and beef broth. Let it simmer for about 2-3 minutes. Return the sautéed veggies to the skillet and mix well.
- Melt the cheese: Evenly sprinkle the cheese over the beef and veggie mixture. Cover and cook on low heat until the cheese has melted.
- Assemble meal prep: Divide the cooked rice and cheesesteak mixture into 8 containers. Store in the fridge for up to 4 days.
Notes
Using lean meat helps to keep the dish healthier. Feel free to customize cheese and toppings based on preference.
