Description

This hearty casserole combines tender ground beef with creamy potatoes and melted cheddar cheese for a comforting family meal.


Ingredients

  • 1 pound ground beef
  • 4 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream
  • 1/2 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and dice potatoes into small cubes.
  3. Chop the onion and mince garlic.
  4. Heat olive oil in a skillet, then sauté onion and garlic until fragrant.
  5. Add ground beef, season with salt, pepper, thyme, and paprika, and cook until browned.
  6. Pour in beef broth and let simmer.
  7. In a mixing bowl, combine diced potatoes with the beef mixture.
  8. Fold in sour cream and half of the cheddar cheese.
  9. Transfer mixture to a baking dish and top with remaining cheese.
  10. Cover with foil and bake for 30 minutes, then remove foil and bake for 10-15 minutes until cheese is melted.
  11. Let casserole rest for 10 minutes before serving.

Notes

For a lighter option, substitute ground beef with ground turkey or chicken. You can also prepare this dish a day in advance and refrigerate it unbaked.
