- 1 pound ground beef
- 4 medium russet potatoes, peeled and diced
- 1 medium yellow onion, chopped
- 2 garlic cloves, minced
- 1 cup shredded cheddar cheese, divided
- 1 cup sour cream
- 1/2 cup beef broth
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
Instructions
- Preheat the oven to 375°F (190°C).
- Peel and dice potatoes into small cubes.
- Chop the onion and mince garlic.
- Heat olive oil in a skillet, then sauté onion and garlic until fragrant.
- Add ground beef, season with salt, pepper, thyme, and paprika, and cook until browned.
- Pour in beef broth and let simmer.
- In a mixing bowl, combine diced potatoes with the beef mixture.
- Fold in sour cream and half of the cheddar cheese.
- Transfer mixture to a baking dish and top with remaining cheese.
- Cover with foil and bake for 30 minutes, then remove foil and bake for 10-15 minutes until cheese is melted.
- Let casserole rest for 10 minutes before serving.
Notes
For a lighter option, substitute ground beef with ground turkey or chicken. You can also prepare this dish a day in advance and refrigerate it unbaked.
