  • 1/4 cup low-sodium soy sauce
  • 1/2 teaspoon ground ginger
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and chopped onion, sautéing until the onion becomes translucent.
  3. Next, add the ground chicken to the skillet, breaking it up with a wooden spoon until fully cooked.
  4. Add broccoli florets and red bell pepper to the skillet, cooking for about 5-7 minutes until vegetables are tender but still crisp.
  5. In a small bowl, mix together soy sauce, ground ginger, sesame oil, red pepper flakes, and a pinch of salt and pepper.
  6. Pour the sauce over the chicken and vegetable mixture in the skillet, stirring to coat evenly.
  7. Add the cooked quinoa or brown rice, stirring to combine all ingredients thoroughly.
  8. Cook for an additional 2-3 minutes to heat through and allow flavors to meld.
