- 1 medium butternut squash, peeled and cubed

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup baby spinach
- 1/4 cup chicken broth
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
- Increase the heat to medium-high and add the ground turkey; cook until browned and cooked through, about 5-7 minutes.
- Add butternut squash cubes, spices, and stir to combine.
- Pour in chicken broth, cover, and simmer over medium-low heat for 10-12 minutes until squash is tender.
- Remove lid, stir in baby spinach until wilted. Garnish with fresh parsley.
