Ingredients

  • 1 medium butternut squash, peeled and cubed

  • 1 small onion, chopped

  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup baby spinach
  • 1/4 cup chicken broth
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
  2. Increase the heat to medium-high and add the ground turkey; cook until browned and cooked through, about 5-7 minutes.
  3. Add butternut squash cubes, spices, and stir to combine.
  4. Pour in chicken broth, cover, and simmer over medium-low heat for 10-12 minutes until squash is tender.
  5. Remove lid, stir in baby spinach until wilted. Garnish with fresh parsley.
