- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 cup bell peppers (red or yellow), diced
- 2 tsp cumin
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp extra virgin olive oil
- ¼ cup fresh cilantro or parsley, chopped
Instructions
- Prepare your ingredients by chopping the onion and bell peppers and mincing the garlic.
- Heat olive oil in a large skillet over medium heat. Add the onion and bell peppers, cooking for about 5 minutes until softened.
- Add the minced garlic and cook for an additional minute until fragrant.
- Push the veggies to one side and add the ground turkey. Cook until browned, breaking it apart for about 7–10 minutes.
- Season with cumin, paprika, oregano, salt, and pepper. Stir to combine.
- Remove from heat and fold in fresh chopped cilantro or parsley before serving.
