Description

Ingredients

  • 1 lb lean ground turkey
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers (red or yellow), diced
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil
  • ¼ cup fresh cilantro or parsley, chopped

Instructions

  1. Prepare your ingredients by chopping the onion and bell peppers and mincing the garlic.
  2. Heat olive oil in a large skillet over medium heat. Add the onion and bell peppers, cooking for about 5 minutes until softened.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Push the veggies to one side and add the ground turkey. Cook until browned, breaking it apart for about 7–10 minutes.
  5. Season with cumin, paprika, oregano, salt, and pepper. Stir to combine.
  6. Remove from heat and fold in fresh chopped cilantro or parsley before serving.

Notes

Opt for lean ground turkey to reduce fat. Cook veggies until softened for enhanced sweetness.
