Description

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and cook for 3-4 minutes until softened.
  3. Stir in the garlic and cook for an additional minute until fragrant.
  4. Add the ground turkey, breaking it apart with a spatula, and cook for 5-7 minutes until browned.
  5. Stir in the zucchini, chickpeas, cumin, smoked paprika, salt, and black pepper, and cook for another 5-7 minutes until zucchini is tender.
  6. Sprinkle fresh parsley on top before serving.
