- 1 pound ground turkey
- 2 medium zucchinis
- 1 tablespoon olive oil
- 1/2 medium onion
- 2 cloves garlic
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes
- 1/4 cup chicken broth
- 1/4 cup grated Parmesan cheese
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Peel and finely chop the onion, then add to the skillet until softened, about 3-4 minutes.
- Peel and mince the garlic, adding it to the skillet and cooking for another 30 seconds.
- Crumble the ground turkey into the skillet and cook until well-browned, about 6-8 minutes.
- Wash the zucchinis, trim the ends, and slice them into half-moon shapes about 1/4 inch thick.
- Add the sliced zucchini to the skillet and cook for 4-5 minutes until slightly softened.
- Sprinkle the dried oregano, salt, black pepper, and crushed red pepper flakes over the mixture.
- Pour in the chicken broth and stir everything to combine.
- Reduce heat to low and let simmer for 3-4 minutes.
- Once the zucchini is tender, sprinkle the grated Parmesan cheese over the skillet and stir until melted.
- Taste and adjust seasoning before serving.
Notes
Serve garnished with extra Parmesan cheese and fresh herbs. Great for meal prep and leftovers.
