Description

A tropical delight featuring marinated chicken paired with grilled pineapple and creamy coconut rice.

Ingredients

Scale
  • 4 chicken breasts or thighs
  • 2 pineapple slices
  • 1 cup coconut rice (rice cooked with coconut milk)
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil

Instructions

  1. Marinate the chicken in soy sauce, minced garlic, salt, and pepper for at least 30 minutes.
  2. Grill or pan-fry the marinated chicken until cooked through and slightly charred.
  3. Prepare the coconut rice according to package instructions, using coconut milk in place of some water.
  4. Grill pineapple slices until caramelized, enhancing their sweetness.
  5. Serve the chicken over coconut rice and top with grilled pineapple slices.

Notes

For best flavor, marinate chicken longer. Use fresh pineapple for superior taste. Consider adding lime zest to the coconut rice for an elevated flavor profile.
