Description

A delightful tropical cake made with crushed pineapple that offers a sweet and tangy flavor in a light and fluffy texture.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 2 teaspoons baking soda
  • 1 cup crushed pineapple (with juice)
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt until well combined.
  3. In a separate bowl, mix the crushed pineapple (juice included!), vegetable oil, eggs, and vanilla extract until blended.
  4. Pour the wet ingredients into the dry mixture and stir gently until just combined.
  5. Transfer the batter into your prepared baking pan, smoothing it out.
  6. Bake for 30-35 minutes until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool completely in the pan before slicing and serving.

Notes

Don’t overmix the batter to ensure a fluffier cake. Use fresh ingredients for the best flavor.
