- 2 cups rolled oats
- 1 1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 1/2 cups milk of choice (almond, soy, or dairy)
- 1/4 cup maple syrup or honey
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 tablespoons coconut oil or unsalted butter, melted
- 2 medium apples, peeled, cored, and diced
- 1/2 cup chopped walnuts or pecans (optional)
- 1/4 cup raisins or dried cranberries (optional)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
- In a large bowl, mix together the rolled oats, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the milk, maple syrup or honey, eggs, vanilla extract, and melted coconut oil or butter.
- Pour the wet ingredients into the dry ingredients and stir until fully mixed.
- Fold in the diced apples, walnuts or pecans, and raisins or cranberries if using.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake in the preheated oven for 30-40 minutes, until golden brown and set.
- Remove from the oven, let it cool for a few minutes, then slice and serve warm.
Notes
For added flavor, consider using Old-Fashioned Rolled Oats and fresh, crisp apples. Adjust spices to your liking and enjoy with yogurt or milk.
