Description

A delicious and wholesome breakfast option featuring a soft oat base, sweet blueberries, and a crunchy crumble topping.


Ingredients

  • 2 cups (180g) old-fashioned rolled oats
  • 1 ½ cups (180g) whole wheat flour
  • ½ cup (100g) packed light brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon fine sea salt
  • ¾ cup (170g) cold unsalted butter or solid coconut oil, cubed
  • 1 teaspoon pure vanilla extract
  • 4 cups (approx. 600g) fresh or frozen blueberries (unthawed)
  • ¼ cup (50g) granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest, finely grated
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang.
  2. In a large bowl, whisk together rolled oats, whole wheat flour, brown sugar, cinnamon, and sea salt until well mixed.
  3. Cut in cold butter (or coconut oil) until the mixture resembles coarse crumbs. Stir in vanilla extract.
  4. Press 2/3 of the crumble mixture firmly into the prepared pan, and set aside remaining 1/3 for topping.
  5. In a saucepan, combine blueberries, granulated sugar, lemon juice, and lemon zest. Cook over medium heat for 5-7 minutes, stirring occasionally.
  6. Whisk cornstarch with cold water to create a slurry, then pour into the blueberry mixture and stir until thickened, about 1-2 minutes.
  7. Remove blueberry mixture from heat and cool for 5-10 minutes before spreading it over the oat crumble base in the pan.
  8. Sprinkle reserved crumble mixture over the blueberry filling and bake for 35-45 minutes, until golden brown.
  9. Cool completely in the pan on a wire rack for 2-3 hours before slicing into 12-16 bars.

Notes

These bars can be made in advance and stored in an airtight container for up to a week in the fridge, or frozen for longer storage.
