A fresh twist on classic carbonara, this Healthy Dairy-Free Carbonara uses simple, nourishing ingredients to deliver a creamy texture without any dairy, making it a satisfying option for any meal.


Ingredients

  • 16 oz gluten-free spaghetti
  • 2 eggs
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 1/4 cup nutritional yeast
  • 1 cup peas
  • 5 slices of turkey bacon
  • 1.5 cups pasta water
  • Juice of 1 lemon

Instructions

  1. Boil the pasta according to package instructions, reserving 1 cup of the pasta water before draining.
  2. Cook the turkey bacon in a large skillet until crispy, about 5 minutes. Remove and chop into bite-sized pieces.
  3. In a bowl, whisk together eggs, salt, pepper, nutritional yeast, and lemon juice to make the sauce.
  4. While whisking, slowly add the reserved pasta water to the egg mixture to create a silky sauce.
  5. Return cooked pasta and chopped bacon to the skillet, pouring the egg mixture over and stirring well to coat.
  6. Stir in the peas and enjoy!
