- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup spinach
- 1 cup chickpeas, drained and rinsed
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp cumin
- Salt and pepper, to taste
- Fresh herbs for garnish (optional)
Instructions
- Cook the quinoa: In a pot, bring the vegetable broth to a boil. Add the rinsed quinoa, cover, and reduce the heat to low. Cook for about 15 minutes until the quinoa is fluffy and the broth is absorbed. Set aside.
- Sauté the veggies: In a large skillet, heat olive oil over medium heat. Add bell pepper and zucchini, sautéing for approximately 5 minutes or until they soften. Stir in garlic powder, cumin, salt, and pepper.
- Add spinach and chickpeas: Toss in the spinach and chickpeas. Cook for another 3–4 minutes until the spinach wilts down.
- Combine everything: Fluff the cooked quinoa with a fork and add it to the skillet. Stir well to combine all the ingredients, letting the flavors meld together for about 2–3 minutes.
- Garnish and serve: If desired, sprinkle fresh herbs on top before serving.
Notes
Rinsing quinoa is essential for taste. You can substitute chickpeas with black beans, lentils, or tofu.
