Description

Delicious and nourishing Healthy Greek Ground Chicken Bowls packed with vibrant flavors, lean protein, and fresh vegetables.


Ingredients

  • 1 pound ground chicken
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups cooked quinoa or brown rice
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced
  • Optional: Tzatziki sauce for drizzling

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the ground chicken and use a spatula to break it up as it cooks. Season with garlic powder, onion powder, oregano, salt, and pepper.
  2. While the chicken is cooking, prepare your base by cooking quinoa or brown rice according to package instructions.
  3. As the chicken cooks, dice the cucumber, halve the cherry tomatoes, and finely chop the red onion and parsley.
  4. Once the chicken is fully cooked and browned, in serving bowls, layer the quinoa or brown rice, followed by the cooked chicken, fresh vegetables, crumbled feta cheese, and chopped parsley.
  5. Squeeze fresh lemon juice over each bowl and drizzle with tzatziki sauce if using. Serve immediately and enjoy!

Notes

Ground chicken is a healthier alternative to traditional ground beef. Feel free to add more veggies or swap grains to mix things up!
