  • 1 medium Zucchini, diced
  • 1 cup Cherry tomatoes, halved
  • 2 cups Spinach leaves
  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • ¼ cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Red pepper flakes (optional) to taste

Instructions

  1. Cook the pasta: In a large pot, bring salted water to a boil. Add your pasta of choice and cook until al dente, according to package instructions. Reserve ½ cup of pasta water, then drain the rest and set aside.
  2. Sauté the vegetables: Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant. Then, add zucchini and cherry tomatoes, cooking until they soften.
  3. Mix it all together: Add the cooked pasta and spinach to the skillet. Toss everything together, adding reserved pasta water as needed to create a light sauce. Season with salt, pepper, and red pepper flakes.
  4. Finishing touch: Once everything is heated through and well mixed, remove from heat. Sprinkle Parmesan cheese on top before serving.

Notes
