- 4 cups Corn (fresh or frozen)
- 1 cup Greek yogurt
- 1/2 cup Red onion, diced
- 1/2 cup Cherry tomatoes, halved
- 1/4 cup Cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
- 1/2 cup Feta cheese (optional)
- 1 Avocado, diced (optional)
Instructions
- If using fresh corn, grill or boil it until tender, then cut the kernels off the cob. For frozen corn, simply cook according to package instructions and let it cool down.
- In a large mixing bowl, combine the corn with Greek yogurt, diced red onion, halved cherry tomatoes, and chopped cilantro. Stir well until everything is well mixed.
- Squeeze lime juice over the mixture and season generously with salt and pepper to taste.
- Optionally, fold in the feta cheese and diced avocado for added creaminess and flavor.
- Serve the salad either chilled or at room temperature for the best taste.
Notes
Using fresh corn is recommended for the best flavor. Adjust lime juice according to preference for brightness.
