Ingredients

  • 4 ears grilled corn, kernels removed
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup Greek yogurt
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat. Grill the corn for about 10 minutes, turning occasionally until charred.
  2. Let the corn cool slightly before cutting the kernels off the cob and into a large bowl.
  3. Add the halved cherry tomatoes, diced red onion, crumbled feta cheese, and chopped cilantro to the bowl with corn.
  4. In a small bowl, mix the Greek yogurt, lime juice, salt, and pepper until smooth.
