- 4 ears grilled corn, kernels removed
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh cilantro, chopped
- 1/2 cup Greek yogurt
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat. Grill the corn for about 10 minutes, turning occasionally until charred.
- Let the corn cool slightly before cutting the kernels off the cob and into a large bowl.
- Add the halved cherry tomatoes, diced red onion, crumbled feta cheese, and chopped cilantro to the bowl with corn.
- In a small bowl, mix the Greek yogurt, lime juice, salt, and pepper until smooth.
- Pour the yogurt dressing over the corn mixture and toss well to combine.
- Serve chilled or at room temperature.
