Ingredients

- 6 oz Bacon
- 1 lb Gnocchi
- 4 cups Broth (chicken or vegetable)
- 1 cup Heavy Cream
- 1 cup Cheddar Cheese
- To taste Seasonings (salt, pepper, garlic, onion)
- 2 cups Optional Vegetables (spinach, kale)
Instructions
- Cook the bacon in a large pot over medium heat until crisp. Remove and drain on a paper towel.
- In the same pot, retain some bacon fat and sauté chopped onions and garlic until translucent.
- Add broth and bring to a boil. Add gnocchi and reduce heat to simmer until the gnocchi float.
- Stir in heavy cream and cheddar cheese until melted and well combined.
- Season to taste and stir in optional vegetables just before serving.
- Garnish with crumbled bacon and additional cheese before serving.
Notes
For a leaner option, consider using turkey bacon. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months.
